Lunch: ...a smores brownie (

Dinner: homemade eggplant "bacon" (YUM!) w/ tomato, lettuce & vegenaise on wheat toast; french fries w/ ketchup; roasted lemon-pepper fennel

Dessert: 1/2 of a red velvet cupcake

Brunch: Vegan Tequila Sunrise (baked tofu, breaded eggplant, jalopeno tofu spread, avocado spread, & tomato on a plain bagel); iced coffee w/ soy milk & sugar [Bagel Rising, Allston, MA]

Snacks: raspberries; salt & vineger potato chips; smores brownie

Dinner: two grilled veggie burgers w/ vegan cheese, carmelized onions, spring mix, tomato, pickles, vegenaise, & mustard on white buns; spring mix w/ heirloom tomatos & italian dressing

LUNCH: oatmeal with soymilk

GOÛTER: bismati rice with soy sauce, herbed, stir-fried bell peppers and onions

SNACK: handful of tortilla chips

DINNER: whole wheat penne, ratatouille, steamed broccoli

SNACK: dried apricots and a few unsalted cashews
