"Sautee" is such a more elegant sounding word than "pan fried."

Dinner was sandwiches. I Sauteed (read pan fried in olive oil) portobello mushrooms and some yellow squash. Mushrooms, because they're nothing but fiber and protein (no fat no carbs) tend to soak up any oil they come in contact with. Too much oil, and they become mushy. Not enough, and they burn on the pan. I got it right this time, but it's not consistantly good.

Any tips on pan frying, I mean Sauteing mushrooms?

Anyway, the sanwiches were sooooo good. I added mustard, tomatoes, lettuce, and a heaping pile of red onions. The best thing about them was that they were so big and delicious.
