Tasty ancient grain

Breakfast; Banana and an apple. Green tea.

Lunch; Tofu strips baked with a touch of soy sauce. Mixed with "fiesta" style vegetables.

Dinner; whole wheat pita stuffed with homemade Kamut* sprouts, baby spinach leaves (now that the e.coli scare is over), frozen lima beans and garnished with mustard. As a side dish, raw carrots and celery dipped in hummus.

I just noticed that this community hasn't been updated in 3 weeks? Is this a dead community?

*Kamut is this ancient type of wheat that was grown in Egypt back more than 2500 years ago. It became extinct when people stopped growing it. But back 3 years ago, in the lower depths of a tomb, an archaeologist found some seeds frozen in ice. He planted it and it grew. You can buy the raw-unprocessed seeds at Sunflower market in the bulk bin, and you can find a brand of Japanese Udon noodles (whose name escapes me) made with it. A lot of people who are illergic to wheat gluten can tolerate it. If you make sprouts from it, you have to harvest them just as the leaves turn green, if you wait too long, they get fiberous and pithy. The sprouts also make an excellent "wheat grass smoothy".

Okay, I'll give it a go...

I'll be the first to admit that I'm not the healthiest of vegans, lately. My school and work schedules leave me little time to prepare fresh, healthy meals. Any quick suggestions/replacements for what I list are always welcome.

Stonybrook Farm Soy Yogurt (Raspberry)
Starbucks vanilla soy latte

"Quesadilla" - Soymage cheddar cheese, tomatoes, and a big flour tortilla
Tostitos brand chips and salsa

Some random frozen stir-fry mix w/carrots, broccoli, peppers, water chestnuts, etc. with a little Oriental seasoning-not too much sodium, which was good
Steamed white rice
Soda (Coke) - Ahhhh! I used to never drink soda-someone help!

I really feel like I'm getting too much sugar and not enough protein.

ok here's me...i have quite a monotonous diet (seriously, minus the cookies this is almost what i have to eat *every* day)

2/3 cup oatmeal, 1/4 cup blueberries, 2 tbsp brown sugar, 1 tbsp ground flaxseed
3 mugs jasmine green tea

3 mugs vanilla rooibos chai tea

1.5 cups whole wheat pasta w/ tomato sauce/onion/ tomato basil tofu chunks
1 Silk key lime soy-gurt

1 small organic honeycrisp apple

2 cups Kashi GoLean
2 cups organic butternut squash soup

1 20 oz coffee w/ dash of soymilk
6-8 vegan "oreo" cookies (helllloooo mindless eating, ugh that was a mistake!)

well without al lthose cookies and late night coffee, it would have been an ok day. still lacking on the veggies but my Champion Juicer just arrived today, so green juice aplenty!
